We have had the opportunity to collaborate with Gluten Free Chef Monica Topliss. Chef Monica of 'The Gluten Free Food Co' make all our Ready-To-Cook meals on site in her kitchen above us at the Butchery. Now, how's that for staying local? Due to the small-scale nature of the business, Monica doesn't use any major machinery meaning that each meal is handcrafted.

The organic Angus cattle are grass fed at Shane and Jane Elliot's property south of Jackson in South West Queensland. Cattle are typically raised to 18 months. The Elliot's also own a small abattoir; the vertically integrated operation ensures the humane treatment of animals at all stages of their lives.
