Thousands of years ago, the ancient Mesopotamian culture made sausages by stuffing chopped or minced meat mixed with animal fat, salt, and spices into cleaned animal intestines. These sausages were salted and cured to keep fresh and became a staple of Middle Eastern, South American, European and eventually, Western culture. This way of serving minced meat has survived for so long and so strongly that it's now an Australian icon. Some things never change... 

But some things do. Take the ingredient list of a classic beef sausage you can find on the supermarket shelves today. 

INGREDIENTS No Added Hormones Australian Beef (71%), Water, Potato Starch, Salt, Rice Flour, Mineral Salt (451), Dehydrated Vegetables [Onion, Garlic], Vegetable Fibre, Thickeners (Sodium Alginate, Guar Gum), Preservative (Sodium Metabisulphite (Sulphites)), Mustard Flour, Herbs and Spices, Acidity Regulators (Citric Acid, Lactic Acid).

Now, sea salt and traditional technique is not enough to preserve these sausages, even with the invention of refrigerators, freezers and packaging. We want to highlight two common preservatives used now in conventional butchery: 

Mineral salt (E451) is a triphosphate (including sodium triphosphate) used to retain moisture and stabilise texture in processed foods. It is considered 'GRAS'. Sodium metabisulfite (E223) is another synthetic sodium compound used as a preservative, antioxidant, and antimicrobial agent. Again, it is GRAS.

Health Concerns Around Additives
 While regulatory bodies deem these additives safe within specific limits, health-conscious consumers and holistic nutritionists increasingly question the impact of constant, cumulative exposure and interactions with other ingredients. Many ultra-processed foods, including ones you wouldn't think of as 'ultra-processed', stack multiple E numbers together, creating a "cocktail effect" that standard safety trials rarely measure. 

Industries and mass producers of foods like this believe they need to use these chemical additives to create safe and long-lasting food, ignoring centuries of technique, and refusing to take advantage of the advancements of safe technology we enjoy today.

Organic Beef (84%), Organic Rice Flour, Garlic, Onion, Salt, Herbs and Spices, Natural Sheep Casing.

Organic rice flour acts as a binder and to lock in moisture, allowing us to create gluten-free and lower-fat sausages to suit all kinds of diets. 

That ingredient list belongs to our classic beef sausages which we've offered at Sunshine Coast Organic Meats for years. A few years ago, we decided to expand our range with some amazing flavours. 

We were inspired by the history and flavour of sausages across the globe, from Romania to Italy, Wales to Oxford. These preservative-free sausages are frozen just after they’ve been made, meaning they retain all their delicious nutrients without going off in your fridge. When you're ready to eat them, just defrost them overnight in the fridge or in a bowl of cold water — or they can be cooked from frozen in the oven or air fryer.
