Back-to-School: Term 3 lunches

Term 3 is on its way back, which means your family is probably thinking about packed lunches again. Finding satisfying lunches for your picky kid can feel like a daily puzzle. Here are some easy, kid-approved lunch ideas  that you can make with the help of Sunshine Coast Organic Meats! 


Meatball Wraps. Use any of our mince, beef or chicken, to bake a batch of mini meatballs on Sunday and freeze in portions for quick weekday use. You can either make meatballs wraps or subs with these meatballs, sauce, lettuce, and cheese. If your kid loves tomato, beetroot, pineapple or any other wetter topping, pack them separately to prevent the bread from getting soggy. If your kid is picky, allow them to build their own sandwiches by packing ingredients separately and offering multiple small wraps or bits of sub to create their own mini wraps.

Zucchini & Bacon Slice.  This protein-packed slice includes free-range eggs, nitrate-free bacon, grated zucchini, cheese, and onion—baked into a portable, fuss-free lunch. Great hot or cold, it’s an easy make-ahead option you can slice and freeze in portions. This is a highly-nutritious and protein-packed make-ahead meal that will fill your child up for the entire school day.

Ham & Cheese Pinwheels. Layer ham and cheese on puff pastry, roll up, slice, and bake. They’re tasty warm or cold, and easy for little hands to eat. Switch it up with tomato sauce and pepperoni for pizza pinwheels. These can also be made ahead and frozen!

Roast Chicken & Veggie Pasta Salad.  Use leftover roast chicken tossed with pasta, cherry tomatoes, cucumber, and a dollop of pesto or olive oil. If you feel okay sending your child to school with hot food, a thermos with spaghetti bolognese is a great warming idea. 

Couscous salad. Couscous is an extremely quick-cooking grain and delicious, too! Combine couscous (can be made and stored 3 days in advance), add baby spinach, grated beetroot, and crumbled feta in a jar or lunchbox. Add a small container of lemon dressing.

How to Keep Lunches Fresh (and Safe!) 
Use an insulated lunch bag with an ice brick or frozen juice box to keep food cool. Pack hot foods in a thermos if your child prefers warm meals. Use leak-proof containers to keep salads crisp and sandwiches from going soggy. Avoid foods that spoil quickly in heat, like mayo-heavy items, unless chilled. If prepping ahead, store lunches in the fridge overnight and pack cold in the morning.
