AIP Spaghetti Bolognese 

Modulating your diet for your health doesn't mean you have to sacrifice your family favourites! Bonnie (@myaiptable) has shared her favourite AIP-compliant dishes, bolognese meat sauce! It is packed full of nutrients, flavour and colour. 

Ingredients

  • 600g beef mince
  • 200g chicken livers 
  • 1 onion, chopped 
  • Small garlic, to your taste preference 
  • Fresh herbs, such as  rosemary, thyme, oregano, parsley, chives or basil. Dried herbs are also okay. 
  • 1 full recipe of AIP Nightshade Free Marinana Sauce
  • 1 cup pitted Kalamata olives 
  • 1 cup mushrooms
  • pinch of salt (and pepper if you have reintroduced)

Method

  1. Grind chicken livers in blender of food processor.
  2. Heat a bit of oil and sauté garlic and onion until garlic is just starting to go golden -- don't walk away as it's easy to burn.
  3. Add beef mince and ground chicken livers. 
  4. Brown the meat. Add mushrooms if using. 
  5. Add the Marinara Sauce, fresh herbs, salt and pepper. Let simmer for 10 minutes. 
  6. Add the kalamata olives. Let simmer another 5 minutes.
  7. You could serve this over Zucchini Noodles or Spaghetti Squash. Or even over a baked sweet potato!  

Spaghetti Bolognese is a staple for winter and a favourite of easy, quick dinners. Replacing spaghetti for AIP compliant foods is easy and just as tasty. Bonnie loves this recipe as she doesn't notice the missing tomato and can return to one of her favourite family meals! The chicken liver is new but gives a depth of flavour unlike anything you've tasted before!
