Buffalo Burgers


Burgers are delicious, kid friendly and easy to make, and with buffalo mince to increase the nutrients and reduce saturated fats, it's something you can reach for week after week. 

Buffalo Burgers

Serves 4 

Ingredients

For the Patties: 

  •  600g 700g buffalo mince 
  • 1 tbsp extra virgin olive oil 
  • 1 tbsp Worcestershire sauce 
  • 1 tsp garlic powder 
  • 1 tsp onion powder
  • 1 tsp salt 
  • ½ tsp freshly cracked black pepper

    To Assemble: 
  • 4 high-quality burger buns (like brioche or sourdough), lightly toasted 
  • 4 slices of cheese (cheddar, provolone, or Swiss work beautifully) 
  • Toppings of your choice including lettuce, tomatoes, and red onion
  •  Sauces: Good quality mayonnaise, dijon mustard, or a simple smoky BBQ sauce

 

Method

1In a bowl, combine the buffalo mince, olive oil, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Use your hands to gently combine everything. Stop as soon as it's mixed in—overworking the meat makes the patty dense. 

2. Divide the mixture into 4 equal portions. Shape them into patties about 2cm thick. Keep in mind the burgers will shrink as they heat up so aim to make them bigger than your burger buns. Press a shallow indent with your thumb into the centre of each patty—this stops them from puffing up into balls while cooking.

3. Heat a heavy skillet, cast-iron pan, or BBQ to medium-high heat. Add a tiny bit of oil to the pan. Cook the patties for 3 to 4 minutes on the first side until a crust forms. It may not look the same as a beef burger because of the fat content, so make sure you flip after 4 minutes regardless of how brown or crusted it is. On the second flip, immediately place a slice of cheese on top of each patty. Cook for another 2 to 3 minutes.

4. Remove the patties from the heat and let them rest on a warm plate for 3 to 5 minutes. This lets the juices redistribute throughout the meat instead of running out onto your plate. Smear your toasted buns with sauce, lay down the lettuce and tomato, top with your juicy buffalo patty, and enjoy!
