Ham Glaze
Classic Ham Glaze
This ham glaze is simple, flavourful and delicious, reducing the stress on serving a fantastic Christmas feast. Buy a nitrate-free ham from Sunshine Coast Organic Meats and coat with this delicious glaze.
Ingredients
- 1 cup fresh squeezed orange juice
- ½ cup honey
- ¼ cup brown sugar
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp ground cloves
- 1 tsp ground cinnamon
- Optional: 1–2 tbsp marmalade for extra shine and citrus flavour
- 1 ham, boneless or bone-in
Method
1. Add the orange juice, honey, brown sugar, Dijon mustard, vinegar, and spices to a small saucepan. Simmer gently. Bring to a low boil, then reduce heat. Let it simmer for 10–12 minutes, stirring occasionally until thickened and syrupy. Once it coats the back of a spoon and doesn't drip off, it's done.
2. Score the fat layer of a ham in a diamond pattern and stud with cloves if you like. Brush a good layer of glaze over the ham and bake at 160°C, basting every 15 minutes. Bake until caramelised and glossy (usually 45–90 minutes depending on ham size). To prevent overcooking, get an instant read thermometer and take out the ham when the thickest part is 63°C.
3. Let the ham sit for 10 minutes before slicing so the glaze sets beautifully.
