Everyday Salad
Ingredients
- 2 cups of salad greens, such as lettuce, rocket or spinach, roughly chopped
- 1 apple, quartered and then halved
- 1 red onion, sliced or roughly chopped
- 1 cup of cheese cubed, cheddar or parmesan, or feta cheese crumbled
- 1 handful of cherry tomatoes, halved
- 1 tablespoon of olive oil
- Salt and pepper
Method
1. Prepare ingredients
2. Toss together in a bowl gently
3. Drizzle olive oil and toss again, add salt and pepper
4. Serve with a chef-made ready meal, or any kind of main dish
note:
Picking different seasonal fruit and vege will make a huge difference for satisfaction and taste. In winter, you can add kale, cabbage and silverbeets. In summer, fruits such as berries and oranges can add a tang to your salads. Snow peas and green beans in the transitional months can add a crunch. When you have more time, you can roast winter root vegetables like carrots and beetroot, as well as pumpkin or sweet potato and make a warm salad.
