Moo Ping Skewers

Moo Ping skewers, or barbecue skewers from Thailand, are full of delicious heat, spice and barbecue flavour. The star of the show is the meat. Pork fillet, also known as pork tenderloin, is sourced from the loin of the pig's back. With a delicate, subtly sweet flavour, it is ideal for a variety of cooking methods including grilling, roasting and pan-frying. It is perfectly prime for marinades and spices to suit any culinary needs. In this instance, the pork loin holds the Thai spices perfectly. 

Ingredients

  • 500g pork shoulder or pork loin, sliced into strips or cubes about 1cm thick
  • 2 tablespoons fish sauce 
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce 
  • 1 tablespoon brown sugar 
  • 2 tablespoons coconut milk 
  • 1 tablespoon vegetable or canola oil 
  • 2 cloves garlic, minced 
  • 1 teaspoon ground coriander 
  • 1 teaspoon ground cumin 
  • 1/2 teaspoon turmeric powder 
  • 1/2 teaspoon white pepper 
  • Bamboo skewers (soaked in water for 30 minutes to prevent burning)

Method

1. Combine the fish sauce, soy sauce, oyster sauce, brown sugar, coconut milk, vegetable oil, minced garlic, ground coriander, ground cumin, turmeric powder, and white pepper to make the marinade. 
2. Add the pork pieces to the marinade, making sure all the pieces are well coated. Cover the bowl and marinate in the refrigerator for 2 hours to overnight. 
3. When you're ready to serve, prepare the dipping sauce by combining the Thai sweet chili sauce, lime juice, fish sauce, chopped cilantro, minced garlic, and minced red chili (if using). Mix well and set it aside. Also, soak bamboo skewer sticks in water for 30 minutes to avoid burning. 
4. Thread the marinated pork onto the soaked bamboo skewers, weaving them onto the skewers in a back-and-forth pattern. Preheat a grill, grill pan or barbecue to medium-high heat, then cook the pork skewers for about 2-3 minutes on each side or until they are fully cooked and slightly charred. 
5. Remove the pork skewers from the grill and serve them hot with the prepared dipping sauce on the side.

note: if you're concerned about your sodium intake, use sodium-reduced fish, oyster and soy sauce. If you're interested in increasing your vegetable servings as well, add capsicum, tomatoes, zucchini, onion.
