
Paleo Power Lettuce Cups
Whether you're a paleo pro, trying it out for the first time or just interested in a new and healthy recipe, these lettuce cups are a great option for hot nights and times when you're feeling lazy.
Paleo Power Lettuce Cups
Serves 4
Ingredients
- 500g paleo mince
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced 1 carrot, finely grated or diced
- 1 capsicum, finely diced
- 2 tablespoons of tamari or coconut aminos
- 1 tablespoon apple cider vinegar (optional, for a tangy kick)
- 1 teaspoon chili flakes (optional, for heat)
- 1 teaspoon ground ginger or ginger paste
- Salt and pepper, to taste
- 1 tablespoon fresh cilantro or parsley, chopped
- 1-2 heads of iceberg or butter lettuce (to use as cups)
- 1 avocado, sliced
- Lime wedges (optional, for serving)
Method
1. Carefully peel away the leafy outer layers of lettuce from the head, keeping them as unbroken as possible. Wash and set aside.
2. In a large skillet over medium heat, heat a tablespoon of oil. Ad the chopped onion and sauté for 2-3 minutes until soft and translucent. Add garlic to the pan and sauté for about 30 seconds, keeping it moving to prevent burning. Add the mince to the skillet and break up with your cooking utensil. Ensure it's broken into small bits and separated enough to cook evenly. Allow the mince to sit for a couple of minutes, then stir occasionally to encourage browning.
3. Stir in grated carrot, diced capsicum and other vegetables you may want to add such as mushrooms, zucchini, or spinach. Season with tamari/coconut aminos, apple cider vinegar, chili flakes, ginger, salt and pepper. Mix to combine then cook for an additional 3-5 minutes.
4. Allow the mixture to cool slightly, then place a few spoonfuls of paleo mince mixture into each lettuce leaf. Top each cup with a few slices of avocado, fresh herbs and a squeeze of lime juice.
